Even though it is only Tuesday I would like to think that I am off to a good start. I made a new recipe today. It was delicious. It is hard to cook at night for just myself. I can't wait for the kids to get old enough to appreciate more foods. I made a Cajun flavored salmon and placed it on top of some sauteed spinach and some couscous.
Couscous
-2 cups of dried couscous
-1 cup of chicken broth
-1 tablespoon of butter
-handful of diced fresh dill
I brought the broth and butter to a boil. Added the couscous and dill and gave a good stir. Removed from heat and let sit covered for about 5 minutes. Fluffed with a fork and transferred to a dish to put in fridge.
Spinach
-two garlic cloves
-tablespoon of extra virgin olive oil
-3 handfuls of fresh baby spinach
Heated up the oil on medium heat. Minced the garlic and sauteed til the garlic was golden. added the spinach and tossed until wilted. Removed from heat.
Salmon
-1lb Salmon filets (skin removed)
-Cajun seasoning
-lemon
-tablespoon of extra virgin olive oil
Heated up oil on medium high heat. While it was heating up I seasoned both sides of the filets generously. Cooked each filet 3 minutes on each side. Squeezed half a lemon over top of the filets on last flip.
I made a bed of couscous, topped with spinach, and then placed salmon on top. Here is how it turned out
