it's going

I feel so productive and yet so unsatisfied with yesterday. I made a To Do list. Check that off the list. But as soon as I started to do something off of it I just jumped all in on a totally different side project. So while I got a lot of something done I got nothing else on the list completed. Ah well. I did manage to still manage to cook Gumbo for dinner. My thing to be thankful for yesterday was a perfectly placed nap time that allowed me to enjoy that dinner.

Our garden beds are getting together. I can't wait for that to be complete. I am ready to get my hands in the dirt. Also nothing better then fresh veggies. This year we decided to reuse some skids and turn them into our garden. So many reasons why this is a good thing. They were cheaper then anything else for sure. Plus with it elevated we will not have a rodent issue and the dogs will not trample or piss on everything. For selfish reasons I wont have to bend over or be on my knees WOOO HOOO.

So today I will add more to my no so complete To Do list. Which is never complete so I don't know what I am saying. I always just add to it. Rewrite it. Add some more. Rewrite it again. No matter how many times I rewrite the list I still for the life of me can't remember what is on it.

Week One

Even though it is only Tuesday I would like to think that I am off to a good start. I made a new recipe today. It was delicious. It is hard to cook at night for just myself. I can't wait for the kids to get old enough to appreciate more foods. I made a Cajun flavored salmon and placed it on top of some sauteed spinach and some couscous.

Couscous
-2 cups of dried couscous
-1 cup of chicken broth
-1 tablespoon of butter
-handful of diced fresh dill

I brought the broth and butter to a boil. Added the couscous and dill and gave a good stir. Removed from heat and let sit covered for about 5 minutes. Fluffed with a fork and transferred to a dish to put in fridge.

Spinach
-two garlic cloves
-tablespoon of extra virgin olive oil
-3 handfuls of fresh baby spinach

Heated up the oil on medium heat. Minced the garlic and sauteed til the garlic was golden. added the spinach and tossed until wilted. Removed from heat.

Salmon
-1lb Salmon filets (skin removed)
-Cajun seasoning
-lemon
-tablespoon of extra virgin olive oil

Heated up oil on medium high heat. While it was heating up I seasoned both sides of the filets generously. Cooked each filet 3 minutes on each side. Squeezed half a lemon over top of the filets on last flip.

I made a bed of couscous, topped with spinach, and then placed salmon on top. Here is how it turned out

Recently I have had a moment of clarity and snapped myself out of a funk. I was spending so much time appreciating what others had and not enough time enjoying what I had. So now I have set up a new philosophy for myself. More like a challenge. I am on a mission to improve my mind-body-wellness. Feeding myself, my marriage, and my family to promote the best future for us all. So while I am not an expert in any of this, I still believe that I know what steps I can take towards the right direction.

     - Do something just for me

     - Stay positive
     - Find something to be thankful for



So, as I take this voyage I am going to document it so I have moments to look back on.
